How can we make Sisig using premium ingredients and transparency to create a new experience for people who love Sisig as much as we do?
Because Sisig is a controversial dish, that was the question we asked ourselves, and after many years we figured it out.
Growing up in Daly City, California home to thousands of Filipinos, like many others who lived in the foggy coastal city, every day I was engulfed by the smell of BBQ sticks grilling over an open fire, and fried tilapia flowing out of the homes that lined many streets throughout the neighborhoods. During the week while at school, I would daydream about one day cooking food that would bring happiness to many people. With those thoughts running through my mind, amongst it all, there was one dish that I would look forward to eating, and it’s the dish that I loved and still love more than anything to this day – Sisig. In my opinion, it’s the most exotic dish in the world with a flavor profile that explodes in your mouth. More importantly, it is magnetic, as Sisig seems to be the dish that brings people together. Every time I’m at a party or gathering and Sisig is at the table, everyone’s faces light up.
For decades, I have been on the hunt and tried Sisig from many different cooks and restaurants worldwide. When I say worldwide, I mean places where you wouldn’t expect to find Filipinos, and it’s those places where I experienced some of the best Sisig I have ever had.
Having the opportunity to experience the many variations, flavors, and culinary art of Sisig produced by many talented cooks around the world, in 2013 I began to create my Sisig that I would one day share with the world.
I knew one thing was certain, I wasn’t going to make Sisig using cheap ingredients. To drive change means you have to do better than the status quo which means using the best ingredients or not doing it at all. We began to source premium-quality ingredients along with organic and high-quality minerals and spices and the results spoke.
Over the past decades, and over 10,000 hours with many failed attempts to make our Sisig, we have successfully crafted Sisig that has made people from all walks of life say “Who made this Sisig? It’s [insert word – amazing, fire, bomb, hella good, unbelievable, the $#!&, the best]. It has been served to hundreds and requested by countless people from all walks of life for gatherings, parties, and events. As each order is made using only premium ingredients that are meticulously crafted, it’s a piece of culinary art that we are proud of.
Our Sisig tends to take center stage at each gathering we host or attend and bring people together. We love seeing the joy and amazement on people’s faces when they take their first bite. After receiving compliments from countless people and words of encouragement to share our Sisig with the world, it’s what we are setting out to do, and we put together a solid team to make it happen.
We are now sharing our art of Sisig with locals in Hercules, California, and around the San Francisco Bay Area. As it was for me growing up, and seeing how Sisig was the center dish that brought people together, I would love to have our Sisig bring people together at your gathering. Even though we are now sharing our Sisig, our journey of searching for the best Sisig worldwide is picking up. We will be searching for more restaurants around the world and going back to some of the restaurants that we have visited in the past, leaving our mark on the restaurants and Sisig chefs who are creating something special, helping to bring awareness to those Sisig chefs who truly deserve to have more visitors try their Sisig creations.
